Tonights Dinner

posted Thursday, 18 December 2008

Ok, so I think we may have already established that I'm greedy.  Ok, maybe not really greedy but I love food.  I think that's why I have such a hard time losing weight, because when it comes to food I lack discipline.  Well maybe I'm exaggerating a little bit.  And I do mean a little bit.  I've noticed that I eat because something looks good or smells good, it's rarely because I'm hungry.  I love every that's not good for you.  Bread, pasta and butter are my worst enemies.  Lol

I do vow that after the holidays it's on!!!!  I'm going to take full advantage of the super cheap membership that I have had with Ba.llys for who knows how long and get rid of some of this weight I've gained and cant seem to shake.  I work literally a block away from the club and work 10 minutes away (if theres not heavy traffic) so there really is no excuse for me to not go on a more regular basis.  So after I indulge in all of the wonderful food we'll be having at my in-laws over the holidays then I'm going to get serious.  At minimum I want to lose 20 pounds by summer.  My 20 year is this summer and if I go I definitely want to make sure I look somewhat fly like I did back in High school.  I was so cute back in the day.  Any way........

I happened to find this blog one day and got super excited.  All the food he cooks looks SOOOOOO tasty and I swear I can feel the pounds adding up while I'm looking though all the different recipes w/pictures mind you that he has on his blog.  If I had nothing but time and money I would try each of his recipes daily.  Of course I'd have to substitute the beef and pork recipes since we don't eat that.  I really do enjoy cooking for my family, but sometimes I'm not too excited about it because I always have a million and one other things to do throughout the day.  By time dinner time rolls around I'm like 'DANG!  I really don't FEEL like cooking.' and I really don't want my family to starve.

And then Tam decides she wants to go and do HER cooking blog which has all kind of stuff I want to try out too.  I swear I can't escape food no matter what I do.  And then she post stuff to entice me like THIS and THIS with strawberries and whip cream.  WOW!!  Desserts are the ultimate weight loss assassin.  If I can overcome my desire for sweet things, I'd be halfway there.

Ok, so when I initially started this entry it wasn't supposed to be about my love for food or my need to drop a good 20-40 pounds. It was supposed to be about our dinner for the evening.  One of the recipes that caught my eye on Darius T Williams blog was the Sweet Thai Basil Chicken.  I love Basil and I adore Thai food, so I had been planning to cook this for the past few weeks.  I decided tonight would be the night since I don't have to work tomorrow.  Did I mention I only worked today (one day out of the week) and don't have to work again until Tuesday.  Well in case I didn't......  I'm off until Tuesday.  HOORAY!!!!!  I happened to be checking out Tam's Cooking blog and saw the recipe for french onion soup.  Although the two don't go together I had a taste for both so that's what our dinner consisted of this evening.  Here are the pictures.

chicken simmering

noodles soaking

our veggie of choice (fresh of course)

sweet thai basil chicken

french onion soup

 Finished product

And let me just tell you it was soooo good.  I used thai rice noodles, which I love, but was not what I intended to use.  Unfortunately I didn't have any other noodles at home to use and the Al.bert.sons that is less than a block from our house didn't have any other noodles to choose from, and since it was cold and snowing again (ARGH!) I wasn't about to venture any further than absolutely necessary.  My family all enjoyed it, which makes me feel great because if it wasn't for them I'd probably NEVER cook.

Well, that's it for me.  I'm going to check out and I'll check in with you all later.  Nighty Night.  Yes, it's bed time for me already and it's not even 9pm.  I'm getting old.  Lol

@ Jameil: I was surprised that it was so very easy and didn't take a long time. I wish I had added more basil and not cut it up so small, but I'll no better for next time.

You're right about the noodle, because it WAS still good. I think I may have some for lunch today. Yum!

@ Kasandra: It was too. Doesn't looking at his blog make you HUNGRY. Lol

I wish I had taken more photos while I was preparing it, but I was hungry and trying to get done. Lol

Awww man....now I'm STARVING, lol. I hate cooking. If it has more than 4 ingredients than I don't even want to begin cooking....

Your food looks good!

@ Gina: Lol, I hope you were able to get something to eat.

The problem is I DON'T have the energy, but the kids and Hubby would starve to dealth or be very malnutritioned if I didn't cook. If it were up to them they would live off of oreos, ice cream and other junk food. Lol

@ LFI: Hey chicky: It was SO good and I'm wanting more soup just looking at my blog. Lol It was surprisingly easy and pretty quick to make. That will be added to our regular menu.

Come new year, my road to healthy eating and exercise will begin. Hopefully I'll have the discipline to stick with it.

@ Rashan: It probably does look good, but you know we're our worst critic. But hey, as long as it tastes good right? That's the most important part. I can think of a few things I've made that looked less that appetizing but tasted great. Although had I seen it an someone else had made it, I wouldn't have been eating it. lol

@ Mamba: You are a nut. LMAO. You sound like my friend. She used to not be able to cook to save her life, but since she's gotten married she's improved quite a bit although she hates to do it. I don't like to cook that much, but sometimes I get in my moods where I want to try different things. If I had more time I would probably like it a lot more.
